Food Wished Pistachio Greenies. Source

Ingredients

Wet ingredients:

  • 1/2 cup melted butter
  • 2 tbsp grated orange zest
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tbsp orange juice
  • 1 tbsp milk
  • 1/4 tsp vanilla extract

Dry ingredients:

  • 2 cups shelled, dry-roasted pistachios
  • 1/2 to 1 tsp salt to taste
  • 1/2 tsp baking powder
  • 1/2 cup flour
  • 1/2 cup dark chocolate chips

For the glaze:

  • 1 or 2 tbsp orange juice
  • 2 tsp orange zest
  • enough powdered sugar to thicken

Process

  • Preheat to 350F
  • Add zest to one stick of warm, melted butter in a bowl. Wisk in sugar for 1 minute, add eggs. Wish until fluffy. Add orange juice, vanilla, and milk.
  • Process pistachios in a food processor until crumbly, but not very fine. Add salt, baking powder, and flour and pulse.
  • Add dry to wet, and mix.

Add batter to thoroughly buttered 9x9 glass baking dish and tap down.

Put in oven for 20-25 minutes. Toothpick will be clean when done. Allow to cool before cutting.
