Good Eats Dark Chocolate Brownies
Ingredients
- 1.25 cups natural cocoa powder (dutch processed works but I don't like it as much)
- 1 cup brown sugar (can use 2/3 cups)
- 1 cup sugar (can use 1/2 cups)
- 1/2 cup AP flower
- 1/2 tsp kosher salt
- 8 oz melted butter
- 2 tsp vanilla
- 4 large eggs (room temp, speed up in warm water if needed)
Prep
- Preheat to 300F
- Line an 8x8 baking pan with parchment + enough to lift brownies out
- Sift all dry ingredients + sugars together
Process
- Beat eggs on high until light in color & texture (few minutes, not too much)
- Set to med-low, add sifted ingredients to eggs
- Add vanilla once integrated
- Set to low, add butter slowly
- Stir 30s after combined, scrape, stir again 15 seconds
Add to the pan and bake for 45 minutes or until a toothpick comes out almost clean. Remove from pan immediately and cut, cool on rack.
Modifications
I have added the following to the batter with success:
- Chopped dried cherries (best option, these brownies are very bitter so these taste great)
- Hazelnut butter
- Coffee would be good if you like coffee
