My Recipe

Ingredients

  • 220g all-purpose flour
  • 200g granulated sugar
  • 150g brown sugar
  • 65g unsweetened natural cocoa powder (not dutch processed)
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (240ml) buttermilk1
  • 1/2 cup (120ml) vegetable oil (or canola oil, or melted coconut oil)
  • 3 large eggs, at room temperature2
  • 1 teaspoon pure vanilla extract
  • 1 cup (240ml) freshly brewed strong hot coffee3

Instructions

  • Preheat to 350
  • Butter, flour, and line cake pans with parchment
  • Sift flour, sugar, cocoa, baking powder, baking soda, salt in med bowl
  • Mix buttermilk, oil, eggs, vanilla on high-ish speed
  • Slowly add dry ingredients on low.
  • Add Coffee
  • Bake 25+ minutes
