Good Eats Fried Fish
Ingredients
- 1 gallon of oil (safflower is best but expensive, veggie oil works too)
- 1 tbs baking powder
- 1 tsp kosher salt
- 1/4 tsp cayenne pepper
- 1 bottle brown beer (homebrewed IPA works well)
- 1.5 lb white fish (haddock, talapia, etc)
- Cornstarch
- 2 Cups flour
Process
- Heat oil to 350F
- Whisk together flour, bp, salt, cayenne.
- Whisk in beer until smooth and lump free
- Fridge for 15 minutes
Dredge fish strips in cornstarch, Then dip in batter. Heat in oil, 2-3 minutes, turning once. Drain on a rack.
