Ham and potato soup

Ingredients

  • 1 1/2 lb gold potato (or any other kind will work)
  • 1 onion
  • 1 carrot
  • 1 celery
  • 8 oz diced smoked ham
  • 3 cloves garlic
  • 3 tbsp butter
  • 1/4 cup flour
  • 4 cups chicken broth
  • 2 cups water
  • 1/2 cup cream
  • salt and pepper to taste
  • cayenne
  • chives

Process

  • Dice all veggies & ham
  • Put soup pot on stove over medium heat, melt butter
  • Once it turns light brown, add veggies, ham, garlic
  • Sweat for 5 - 6 minutes til soft
  • Add flour for 3 minutes
  • Add 1 qt cold stock and stir
  • Add rest of stock
  • Add water
  • Heat up to med high, simmer for 15 minutes
  • Cube potatoes and let sit in cold water
  • Taste soup for salt & season
  • Drain potatoes and add to soup
  • Cook 15 minutes

Done when potatoes are mashable

  • Mash some potatoes in the soup with potato masher
  • Add seasonings
  • Add cream
