Ham and potato soup

Ingredients
- 1 1/2 lb gold potato (or any other kind will work)
- 1 onion
- 1 carrot
- 1 celery
- 8 oz diced smoked ham
- 3 cloves garlic
- 3 tbsp butter
- 1/4 cup flour
- 4 cups chicken broth
- 2 cups water
- 1/2 cup cream
- salt and pepper to taste
- cayenne
- chives
Process
- Dice all veggies & ham
- Put soup pot on stove over medium heat, melt butter
- Once it turns light brown, add veggies, ham, garlic
- Sweat for 5 - 6 minutes til soft
- Add flour for 3 minutes
- Add 1 qt cold stock and stir
- Add rest of stock
- Add water
- Heat up to med high, simmer for 15 minutes
- Cube potatoes and let sit in cold water
- Taste soup for salt & season
- Drain potatoes and add to soup
- Cook 15 minutes
Done when potatoes are mashable
- Mash some potatoes in the soup with potato masher
- Add seasonings
- Add cream
