Good Eats Fried Fish

Ingredients

  • 1 gallon of oil (safflower is best but expensive, veggie oil works too)
  • 1 tbs baking powder
  • 1 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 1 bottle brown beer (homebrewed IPA works well)
  • 1.5 lb white fish (haddock, talapia, etc)
  • Cornstarch
  • 2 Cups flour

Process

  • Heat oil to 350F
  • Whisk together flour, bp, salt, cayenne.
    • Whisk in beer until smooth and lump free
    • Fridge for 15 minutes

Dredge fish strips in cornstarch, Then dip in batter. Heat in oil, 2-3 minutes, turning once. Drain on a rack.
