Good Eats Chocolate Fudge

Ingredients

  • 2.75 cups sugar
  • 40 oz unsweetened chocolate (use the good stuff)
  • 3 tbs butter
  • 1 cup half & half
  • 1 tbs light corn syrup
  • 1 tsp vanilla

Prep

  • Use a wooden spoon!
  • Butter 8x8 baking dish. Cut parchment that is 2" larger on all sides, slit corners so it fits in the dish

Process

  • In a heavy sauce pan, combing sugar, chocolate, 2tbs butter, half & half, and corn syrup.
    • Stir over medium heat until sugar is dissolved and chocolate is melted
    • Increase heat and bring to a boil
    • Reduce heat to med low and add a lid for 3 minutes
    • Remove lid, heat to 234F
    • Turn off heat, add remaining 1tbs butter to top to melt. Leave pot alone to cool for 10 minutes tp 110F
  • Stir vigorously until no longer shiny. If fudge falls in slumps it is ready to pan. Add vanilla now

Let cool for 2 hours on counter before cutting
