This is for a plain broccoli quiche. Modification can easily be made.

Broccoli Quiche

Ingredients

  • 2tbs butter
  • 1/2 an onion (yellow, white, or red depending on other ingredients)
    • 3 shallots works too, in place of an onion
  • 2 cloves garlic, minced
  • 1 cup broccoli
  • 1 1/2 cups (freshly) shredded cheese
  • 4 large eggs, beaten
  • 1 cup milk
  • 1/2 cup heavy creme (not required but makes it way tasty)
  • Salt / pepper / other seasonings
  • 1 pie crust (frozen from the grocery works, but follow directions for cold pies -- usually need to pre-bake it for 10-15 mins. Not doing this results in a soggy bottom)

Process

  • Preheat to 350F
  • Melt butter over medium heat. Slowly saute onions / garlic until soft (do not brown)
  • Combine milk / creme / eggs
  • Stir in broccoli, heat until soft
  • Move broccoli/onion to the pie crust, and put 1/3 cheese on top
  • Pour 1/2 eggs in pie crust, give it a shake to help it settle
  • Add another layer of cheese, then more eggs, repeating until all gone. Top layer should be cheese
  • Bake in oven for around 30 minutes. Center should be set (test with a knife, should just barely be wet if entered in to center) and top should be golden brown

Tips

  • This is essentially a custard. Overcooking will ruin it, so take it out before it is completely cooked
  • It will continue to cook after being out of the oven
  • Allow to sit for 5-10 minutes before cutting, so it can set

Modifications

Smoked Salmon & Gruyere Quiche

  • 4-6 oz smoked salmon, torn in to small pieces
  • Block of Gruyere, shredded fresh
  • Creme cheese could substitute the heavy creme here, but melt it over low heat first.

Prepare the quiche as normal, but when you add the veggies to the pie, also add half the salmon. Add eggs and cheese on top, then more salmon, and repeat. All the salmon should be covered in eggs & cheese. Top layer should always be cheese.

Roasted Red Pepper, Shrimp, and Parmesan

  • Roast one whole red bell pepper, dice
  • Blocks of Parmesan are expensive, so I get one small one, and mix with equal parts of a bag of shredded Parmesan or a bag of Italian blend
  • Use about 1 cup of shrimp. Cooked baby shrimp are easy, but if you get frozen or raw, thaw them, then lightly saute until just under cooked. Over cooking will make them rubbery
  • Broccoli goes well with this
