Stir Fried Quinoa (foodwishes)

Ingredients

  • 1 cup quinoa
  • salt to taste
  • 1 1/2 cups cold water
  • 1 tbsp vegetable oil
  • 1 cup diced smoked ham
  • 1/2 cup diced peppers
  • 1/2 cup sliced green onions
  • 3 cloves garlic minced
  • 1 tbsp seasoned rice vinegar
  • 1 or 2 tbsp soy sauce, or to taste

Directions

  • Rinse quinoa for 1 minute
  • Add a pinch of salt, quinoa, water to pan, and bring to simmer on high
    • Cover, reduce to low, and sommer slowly for 15 minutes. Turn off heat, sit for 5 minutes
  • Dice all other ingredients
  • Add oil to med heat pan
  • Add ham, peppers, onions for 5 minutes or so
  • Turn off heat, add garlic for a minute
  • Dump quinoa into other pan, heat to med low
  • Add vinegar, soy sauce, sricha, etc
